Conditioning of corn for pressing and baking

PURPOSE: To obtain conditioned corns having uniform swellability and excellent palatability, and free from hard parts, by treating the corns with an alkali to remove the skins and the hard tips, and after neutralization, immersing into hot water until the water content becomes about 50%. CONSTITUTION: Corns are immersed in an alkline solution at about pH 13 and about 90°C for about 10min, and washed with water to separate and remove the skins and the hard tips therefrom. The corns thus treated are neutralized with an acid solution such as citric acid solution, malic acid solution, etc., optionally washed with water, and immersed in hot water at 40W60°C for 7W8hr to adjust the water- content at about 50%.
